Elderberry has the
most grape-like
aroma of all fruit wines. Created as an off dry, this wine has a
wonderful floral bouquet with hints of elderflower. A nice tart
mid-palate
which finishes with a soft sweetness. Elderberries rate the
highest
of any fruit in anthocyanin pigments, associated with the consumption
of
healthy red wines.

Delicate aromas of ripe raspberries, spice, apple, and a touch of
citrus.
Shows a nice burst of sugar on the fore palate, but finishes dry.
Subtle,
laid-back berry flavours. Good body and quite long, with a nippy

Not surprisingly, a gold medal winner. Easy drinking and fruity with

followed
by red currants and a bit of caramel. It presents a citrusy nip up
front

finishes
quite dry. Very good body, length and evolution. Think in terms of a
pink

Riesling
Supreme
This wine is a
unique blend
of riesling with gooseberries. Describing this wine is a challenge in
itself
because it has the best of both worlds in it. It shows off the Riesling
in the palate and gooseberry on the nose and finish so it is truly
unique.
If you love Riesling by itself it is a must try, but if you love
gooseberry
it is also the same, a must try.
One of our
winemaker's favourite
whites. Serve chilled with or without dinner. Wonderful wine.

Scarlet
O'Hara
Named for its
vibrant colour,
this wonderful blend of Strawberry and Cranberry starts with the smell
of fresh strawberry jam. This off dry wine, starts your palate racing
with
hints of creamy fruit and fresh acidity. This wine finishes crisp while
the acid from the Cranberry cleanses your palate. A nice alternative to
traditional blush wines. Serves well with turkey, chicken or pork.

In Europe, Cassis
Black Currant
is mixed with white wine to give a very exquisite drink called Kir.
Cassis
and champagne is aptly named Kir Royale. We have found that if you mix
Cassis and Gooseberry supreme on a 1:2 ratio, you obtain an equally
exquisite
drink.
Name for mix anyone?
Maybe
Kountry Kir or Black Goose!

A touch of the
tropics is what
you will find in this delightful unoaked, "sur lie", Chardonnay. The
bouquet

Halton
White
This is a
first for the
Region of Halton, grown right here in Halton Hills. This wine is
the first commercially produced grape wine from French Hybrid grapes,
grown
at the Toccalino vineyard, situated on the sunny slope of the beautiful
Niagara Escarpment in Halton Hills. An excellent easy-to-like,
high
quality, food friendly white wine that is a testimony to the success of
growing grapes outside of Ontario's traditional viticultural areas.
Halton White
is a
blend of Auxerrois, Seyval Blanc, Vidal and Cayuga White, grape
varieties.
It has a very clear, pale straw colour with a light green glint
accompanied
by a mild lemon-skin aroma with hints of pineapple and
green-mango.
A fleeting hint of grape jelly is also present. Full textured
with
crisp acidity, balancing residual sweetness ('1' on the sugar scale)
and
warmth (13.7% alc.).

Halton
Red
Blend of Baco Noir,
Lucy Kuhlmann
and De Chaunac; 12.1% alc. Deep and saturated black-ruby with magenta
highlights.
Aromas of tulips and linden flowers give way to tart red berries, hints
of brown sugar and an earthy undertone - all framed by a subtle oak
aroma.
Tangy acidity is balanced by a substantial, almost glycerolic palate
feel
and a dusting of tannin. Just a bit of residual sugar is noted. Tasty
and
full-textured; well balanced. Long, earthy finish.

and slight vanila characteristics to it.
